Paul,

I am not sure when they first start storing nuts in the fall, but granaries 
are attended continuously until consumed.

According to a video I saw (Sir David Attenborough's series on The Life of 
Birds on PBS, "the insatiable appetite",

the nuts are fitted and wedged into holes by family groups, usually 
pre-existing in an established colony. The nuts shrink as they dry and 
loosen. Therefore, the birds continuously check, defend, and move nuts 
through the late fall and winter, making sure they are tight so that they 
don't fall out or get stolen by squirrels.
