Both these questions are better answered by Steve Shunk, who lives in
the middle of the hybrid zone for both, over in Sisters. But, briefly
(and these are-well covered in Sibley's field guide and in Kaufman's
Advanced Birding:

1) Townsend's x Hermit Warbler

Townsend's has green back and yellow breast.
Hermit has gray back and white breast.
Hybrids are intermediate in one or more ways.
Birding Vol 33, No 4, August 2001, Eckert

2) Red-breasted x Red-naped Sapsucker

Hybrid looks intermediate, with black chest patch visible on red throat.
Birding Vol 23, No 1, February 1991, Lehman

Note: Daggetti subspecies of Red-breasted Sapsucker, from southern
Cascades south, is paler red and shows a white stripe through the red
from the neck down the side of breast.
